Sweetly Satisfying

Thanksgiving is the one day each year that you’re allowed–even expected–to indulge. This year, make your indulgence healthier with a nutrient-packed, delicious dish: Maple Roasted Sweet Potatoes.
Sweet Potatoes

 

What you’ll need:

  • 2 ½ pounds of peeled and cubed sweet potatoes
  • 1/3 cup of pure maple syrup
  • 2 tablespoons of melted butter
  • 1 tablespoon of lemon juice
  • 1/2 teaspoon of salt
  • Fresh pepper to taste


What to do:

  1. Preheat the oven to 400 degrees.
  2. Place sweet potatoes in a 9-by-13-inch glass baking dish.
  3. Mix maple syrup, butter, lemon juice, salt and pepper in small bowl.
  4. Pour the mixture over the sweet potatoes and toss to coat.
  5. Cover and bake for 15 minutes.
  6. Uncover and stir.
  7. Bake an additional 40 to 50 minutes, stirring every 15 minutes, until the potatoes are tender and starting to brown.


Makes 12 one-half cup servings.
