Sweetly Satisfying

Thanksgiving is the one day each year that you’re allowed–even expected–to indulge. This year, make your indulgence healthier with a nutrient-packed, delicious dish: Maple Roasted Sweet Potatoes.
What you’ll need:
- 2 ½ pounds of peeled and cubed sweet potatoes
- 1/3 cup of pure maple syrup

2 tablespoons of melted butter
- 1 tablespoon of lemon juice
- 1/2 teaspoon of salt
- Fresh pepper to taste
What to do:
- Preheat the oven to 400 degrees.
- Place sweet potatoes in a 9-by-13-inch glass baking dish.
- Mix maple syrup, butter, lemon juice, salt and pepper in small bowl.
- Pour the mixture over the sweet potatoes and toss to coat.
- Cover and bake for 15 minutes.
- Uncover and stir.
- Bake an additional 40 to 50 minutes, stirring every 15 minutes, until the potatoes are tender and starting to brown.
Makes 12 one-half cup servings.
