Drea Sobke's Yummy Crunchy Quinoa Recipe

Ingredients
- 1 cup dried quinoa
- 2 cups water or chicken/vegetable broth
- 1 bunch of radishes
- 4-5 green onions
- 1 bunch of Italian parsley
- Golden raisins (handful)
- Slivered almonds (handful)
- 3 mint sprigs
- Crumbled feta cheese
- Olive oil
- Cumin
- Sea salt and pepper
- Lemon juice
Preparation
- In a pot, bring the quinoa and water or broth to a boil, then cover and simmer for 10–12 minutes. Once done, it should be fluffy. Remove from heat and let cool.
- Meanwhile, chop vegetables: halve and thinly slice radishes, thinly slice green onions on an angle, and roughly chop Italian parsley and mint.
- Add all veggies to a bowl, along with golden raisins, slivered almonds and feta.
- Add the cooled quinoa.
- Add olive oil, lemon juice, cumin, sea salt and pepper to taste.
- Mix it all up and keep covered in the fridge.
